Oven Chipped Potatoes Recipe

Ingredients
  • 1 tbsp butter or margarine .
  • 1 tsp salt .
  • 1 tbsp onions, minced .
  • 4 idaho potatoes, thinly slice (do not pare) .
  • 1 tbsp fresh parsley, sliced .
  • 1/8 tsp pepper .
  • 1 1/2 c low-fat cheddar cheese, grated .
  • 1/2 tsp dried thyme

Directions
  • Step #1 Preheat oven to 425F degrees F.
  • Step #2 Layer potato slices in 13x9x2 inch baking dish lightly sprayed with oil.
  • Step #3 Melt butter in small saucepan & stir in the grated onion, salt & pepper.
  • Step #4 Pour over potatoes & bake for about 45 mins or until tender when pierced with fork.
  • Step #5 Sprinkle top with parsley, thyme & cheese & bake for an extra 15 mins or until cheese is melted.
