Grandma Rose's Regal Carrot Cake Recipe

Ingredients
  • 8 oz softened cream cheese .
  • 1 lb powdered sugar .
  • frosting .
  • 1 tsp salt .
  • 1 (16 oz) can crushed pineapple (well drained) .
  • 2 c unbleached flour .
  • 4 eggs .
  • 1 c softened unsalted butter .
  • 2 c sugar .
  • 1 1/2 c vegetable oil .
  • 2 c finely grated carrots .
  • 2 tsps cinnamon .
  • 2 tsps baking powder .
  • cake .
  • 1 1/2 tsps baking soda .
  • 1 tsp vanilla extract

Directions
  • Step #1 Preheat oven to 350 degrees.
  • Step #2 Grease & flour generously a bundt pan.
  • Step #3 Cream together the first 4 ingredients.
  • Step #4 Sift together the next 4 ingredients.
  • Step #5 Slowly add the sifted ingredients to the creamed mixture.
  • Step #6 When well incorporated, add the crushed pineapple & grated carrots.
  • Step #7 Mix & mix together well.
  • Step #8 Bake for 35-40 mins or until knife comes away clean from center of cake.
  • Step #9 While cake is baking, prepare the frosting.
  • Step #10 Cream together the first 3 ingredients.
  • Step #11 Slowly incorporate the powdered sugar until you reach a frosting of nice consistency (you may find you need a little less powdered sugar).
  • Step #12 When cake is done, let it cool.
  • Step #13 Remove from pan & continue to let it cool completely on a wire rack.
  • Step #14 When cake has COMPLETELY cooled, frost it.
