Ingredients
For the dough .
5 tbsps softened butter .
1/2 c granulated sugar .
1 lemon, zest of .
5 oz warm milk .
1/2 c sugar .
1 lemon, zest of .
2 1/4 c flour .
1/2 c dark brown sugar .
1 1/2 tbsps dry yeast .
1/2 c butter .
For the streusel .
1 pinch salt .
1 c ground almonds .
2 lbs red plums, washed & sliced 1/4-inch thick (don't peel the plums, it looks prettier with the skin on them) .
2 1/2 c flour .
2 eggs
Directions
Step #1 For the cake: In a small bowl, dissolve the yeast into the warm milk.
Step #2 Allow it to stand for 10 to 15 mins.
Step #3 With an electric mixer, cream the lemon zest, sugar & butter until fluffy.
Step #4 Add the eggs one at a time & mix well.
Step #5 Sift the flour & salt together into a bowl.
Step #6 Make a well in the flour & add the egg mixture.
Step #7 Knead until mixed well.
Step #8 Pour in the yeast mixture.
Step #9 Continue to knead until the dough is soft & pliable, then allow it to rest for 15 mins.
Step #10 You want it to rise & bubble.
Step #11 Preheat the oven to 350 degrees.
Step #12 Spray a 9-inch cake loaf pan (or a muffin pan) with cooking spray & transfer the dough to the pan (or divide it between the molds).
Step #13 Set it aside in a warm place for 15 mins or until it rises above the edge of the molds.
Step #14 Arrange the plums on top.
Step #15 For streusel topping, melt butter in a small saucepan, add the other ingredients & stir with a spoon until mixed well.
Step #16 Sprinkle top on top of the plums, brush with butter.
Step #17 Bake for 15 to 30 mins or until golden brown.
