Chicken Paillardes With Mustard Shallot Sauce Recipe

Ingredients
  • 1 tbsp butter .
  • 1 tsp worcestershire sauce .
  • 1 tbsp Dijon mustard .
  • 2 tsps tomato paste .
  • 1 tbsp balsamic vinegar .
  • 2 sprigs fresh thyme .
  • 1/2 c dry white wine .
  • 3 tbsps shallots, finely sliced .
  • 1/2 c chicken broth .
  • 1/4 c heavy cream .
  • 2 tbsps parsley, finely sliced .
  • 4 boneless skinless chicken breasts, lbed thin

Directions
  • Step #1 Spice up breasts with salt & pepper.
  • Step #2 Melt the butter in a skillet over med-high heat.
  • Step #3 Add the chicken breasts & cook this until they are lightly brown, depending on thickness anywhere from 2-5 mins per side.
  • Step #4 Remove the chicken to a warm platter.
  • Step #5 Add the shallots & the thyme to the skillet & cook, stirring, until the shallot is soft & wilted.
  • Step #6 Add the broth, vinegar, wine, Worcestershire & bring to a boil.
  • Step #7 Stir in the tomato paste & cook this until the sauce is reduced by half.
  • Step #8 Add the cream & bring to a full boil, stir in the the mustard.
  • Step #9 You should have about 3/4-c of sauce.
  • Step #10 Arrange the chicken breasts on a serving platter.
  • Step #11 Spoon the sauce over the meat, sprinkle with parsley & serve.
