Beef Stew-family Favorite Recipe

Ingredients
  • 1 (14 oz) can corn .
  • 1 tbsp olive oil .
  • 1 (14 oz) can green beans .
  • 1 stalk celery, finely sliced .
  • 2 c water .
  • 1 onion, finely sliced .
  • 2 potatoes, cubed cooked separately .
  • 2 tsps Mrs. Dash seasoning mix .
  • 1 (14 oz) can peas .
  • 1 tbsp beef base .
  • 2 garlic cloves, minced .
  • salt & pepper .
  • 2 carrots, sliced or 12 baby carrots, sliced .
  • 1 lb beef, cubed into bite size pieces

Directions
  • Step #1 In a large pot, heat oil over medium/high heat & saute onions, garlic & celery til translucent.
  • Step #2 Add beef & carrots to onion mixture & continue to cook this until meat is browned.
  • Step #3 (sometimes I even skip this step if I am in a hurry.
  • Step #4 ).
  • Step #5 Add water, beef base, Mrs Dash & salt & pepper taste.
  • Step #6 Bring to a boil, cover & let simmer about 2 hrs until the meat is nice & tender.
  • Step #7 Add canned vegetables & cook this until heated through.
  • Step #8 Serve with dumplings or a nice roll.
  • Step #9 Extra stew can be frozen in a zippy bag.
  • Step #10 ***I slightly undercook the potatoes separately because I found that the potatoes held up better when I froze the stew.
