Raspberry Cheesecake Cookie Pizza Recipe

Ingredients
  • 1 tbsp sugar .
  • 1 tsp vanilla .
  • 3/4 c sugar .
  • 1 egg .
  • 1/3 c seedless raspberry preserves .
  • 1/4 c sliced almonds, toasted .
  • 1 1/2 c all-purpose flour .
  • 3/4 c butter (softened) .
  • 1 egg yolk .
  • 8 oz cream cheese (softened)

Directions
  • Step #1 Beat the butter In a large-ish mixing bowl with an electric mixer on medium to high speed for 30 seconds.
  • Step #2 Add the 3/4 c sugar & beat till mixd.
  • Step #3 Beat in egg yolk & vanilla till mixd.
  • Step #4 Beat in as much of the flour as you can with the mixer.
  • Step #5 Stir in any remaining flour with a wooden spoon.
  • Step #6 Spread dough in a lightly greased 12 or 13 inch pizza pan.
  • Step #7 Bake in a 350-F oven about 25 mins or till golden.
  • Step #8 Meanwhile, beat together cream cheese, 1 egg & the 1 tbl sugar till smoth.
  • Step #9 Spread over hot crust to within 1/2 inch of the edge.
  • Step #10 Dollop reserve on top.
  • Step #11 With a knife, carefully swirl preserve to marble.
  • Step #12 Sprinkle top with almond.
  • Step #13 Bake 5 to 10 mins more till filling is set.
  • Step #14 Cool in pan on a wire rack.
  • Step #15 Cut in wedges.
  • Step #16 Store in refrigerator.
