Not Your Mama's Meatloaf - Low Carb & Beefed Up Recipe

Ingredients
  • Tomato Sauce Topping .
  • 1/2 tsp ground black pepper .
  • 2 tsps white vinegar or water .
  • 1 tsp kosher salt .
  • 2 tbsps sliced fresh parsley leaves .
  • 1/4 c red bell peppers, sliced (roasted or fresh) .
  • 1 (8 oz) can tomato sauce .
  • 1/4 c sliced onions .
  • 2 lbs ground beef .
  • 2 garlic cloves, minced .
  • 1 (6 oz) can tomato paste .
  • 1/2 c grated parmesan cheese .
  • 1/2 lb provolone cheese, sliced .
  • 1/4 lb prosciutto, thinly sliced (optional) .
  • 1/2 tsp dried oregano .
  • 2 eggs .
  • 1/4 c sugar substitute (such as Splenda) .
  • Meatloaf .
  • 1/2 tsp dried basil

Directions
  • Step #1 Preheat oven to 350°F.
  • Step #2 In small bowl, mix tomato sauce topping ingredients & set aside.
  • Step #3 Add water to sauce to thin, as needed.
  • Step #4 In large bowl, cheese, vegetables, mix beef, eggs, herbs & seasonings.
  • Step #5 Place meat mixture on a wax paper-lined jellyroll pan or counter.
  • Step #6 Form meat into a 10x8-inch flat rectangle.
  • Step #7 Place prosciutto slices on the meatloaf mixture.
  • Step #8 Place the provolone slices on top.
  • Step #9 Starting with the short side, roll the meatloaf up (may need to use the wax paper to help).
  • Step #10 Seal ends & place, seam side down, into a loaf pan.
  • Step #11 Spread tomato sauce topping on the meatloaf, completely covering the top.
  • Step #12 Bake for 75 mins (1 hr 15 mins).
  • Step #13 Drain fat & let rest 10 mins before serving.
