Ingredients
2 tbsps canola oil .
1/2 tsp baking soda .
6 tbsps butter .
2-3 tbsps powdered sugar (optional) .
1/4 c sliced walnuts .
3/4 tsp baking powder .
1 tbsp brandy or orange juice .
2 c flour .
1 pinch ground cloves .
1 small orange, zest of .
1 small lemon, zest of .
1 large egg yolk .
1 large egg .
3/4 c sugar
Directions
Step #1 Preheat oven to 325F degrees.
Step #2 Spread walnuts in a single layer on a ungreased cookie sheet & toast for 5-7 mins.
Step #3 Stir every once in awhile to ensure even toasting.
Step #4 Remove from oven & let cool.
Step #5 In a large bowl, baking soda, mix flour baking powder, cloves.
Step #6 Set aside.
Step #7 In a food processor/blender (or mixer), mix the lemon & orange zest with the sugar.
Step #8 Process for several mins, stopping to scrape down the sides.
Step #9 You want the zest to be sliced very fine & well incorporated into the sugar.
Step #10 Add the walnuts & canola oil & continue processing until the walnuts have been pureed into the sugar.
Step #11 Transfer to a small bowl.
Step #12 Place the butter into the food processor/blender & mix for a min until the butter is light & fluffy.
Step #13 Add the sugar, walnut mixture, zest, egg & egg yolk & either brandy or juice.
Step #14 Process just until these ingredients are well mixed into the butter.
Step #15 Gradually add in the flour, pulsing quickly after each addition.
Step #16 Use as little mixing time at this point as over-processing the dough toughens the cookie.
Step #17 Once mixed, divide dough into two balls, wrap each ball in wax paper & place this in fridge for 90 mins or longer.
Step #18 Preheat (or reheat) oven to 350 degrees.
Step #19 Prepare cookie sheets with a light brush of oil or cooking spray.
Step #20 Take one ball of dough & split in half.
Step #21 Return half to fridge while working with the other.
Step #22 With the half you are working with, pinch off a ball of dough about the size of a shelled walnut.
Step #23 Quickly roll this into a rope about 4 to 6 inches long.
Step #24 Ropes can be shaped into rings, horseshoes or an ‘S.
Step #25 ’ Place on cookie sheet 2 inches apart.
Step #26 If the dough warms & becomes difficult to handle, return it to the fridge & continue working with another piece of well-chilled dough.
Step #27 Bake cookies for 10 to 12 mins until they are browned on the edges & just a little golden on the tops.
Step #28 Cool cookies on the baking sheet for 2 or 3 mins before transferring to a cooling rack.
Step #29 Once fully cooled, dust with powdered sugar.
