Crostini With Roasted Red Pepper And Feta Recipe

Ingredients
  • 1/2 tsp black pepper .
  • 4 oz feta cheese, crumbled .
  • 1/2 tsp salt .
  • 4 garlic cloves, unpeeled .
  • 1 tbsp red wine vinegar (or tarragon vinegar) .
  • 4 1/2 tbsps olive oil .
  • 1 loaf French baguettes .
  • 2 medium red bell peppers, roasted .
  • 1 (15 oz) can great northern beans, rinsed & drained .
  • fresh Italian parsley (to garnish)

Directions
  • Step #1 To roast the garlic & red bell peppers, first arrange the garlic cloves on a piece of foil wrap, drizzle with some olive oil & fold foil wrap to seal.
  • Step #2 Next place the whole bell peppers on the baking sheet.
  • Step #3 Drizzle about 1/2 tbsp olive oil onto the peppers, turning to coat.
  • Step #4 Roast for about 15-20 at 425F degrees.
  • Step #5 Watch carefully! Once the garlic & roasted bell peppers are done, set aside to cool.
  • Step #6 In a food processor/blender, squeeze the garlic out of their skin.
  • Step #7 Next peel the bell peppers, remove seeds & stem, chop coarsely & add to processor.
  • Step #8 Add 2 tbsps oilve oil, vinegar, salt, beans, pepper & half of feta.
  • Step #9 Pulse about 5 or 6 times or until mixd.
  • Step #10 Cut bread into 24 slices (1/4") on the diagonal.
  • Step #11 Arrange the bread slices on the baking sheet, & brush with remaining 2 tbsps olive oil.
  • Step #12 Spread the bell pepper-bean mixture on one side of each slice of bread.
  • Step #13 Lastly, sprinkle with remaining cheese.
  • Step #14 Bake at 350 degrees for 5-7 mins.
  • Step #15 Garnish with Italian parsley & serve.
