Sesame-crusted Catfish With Sweet-and-sour Sauce Recipe

Ingredients
  • vegetable oil, for frying .
  • 1 1/2 tbsps ketchup .
  • 1 1/4 tsps soy sauce .
  • Sesame-Crusted Catfish .
  • 2 tbsps brown sugar .
  • 1/4 c water .
  • 1/2 c sesame seeds .
  • 4 (6 oz) u.s. farm-raised catfish fillets .
  • 4 slices fresh ginger, quarter-size slices, peeled & minced .
  • 1 tbsp corn or canola oil .
  • 1 fresh garlic clove, minced .
  • green onions, sliced .
  • 1 tbsp white vinegar .
  • Sweet-and-Sour Sauce .
  • 1 1/2 tsps cornstarch, dissolved in 1 tbsp water

Directions
  • Step #1 For the catfish, heat one inch of oil In a large-ish, heavy skillet over med-heat/flame.
  • Step #2 While oil is heating, rinse catfish fillets & pat nearly dry with paper towels.
  • Step #3 Place sesame seeds in shallow dish.
  • Step #4 Press fillets into sesame seeds– Fully coat on both sides.
  • Step #5 Place fillets in the hot oil & cook for 3 to 4 mins on each side or until flaky- Drain on paper towels.
  • Step #6 Spoon sauce over fillets.
  • Step #7 Garnish with sliced green onions.
  • Step #8 For the sweet-and-sour sauce, in a mixing bowl mix & dissolve the first 5 ingredients & keep nearby.
  • Step #9 Heat a small but heavy saucepan over high heat until hot & then add the oil.
  • Step #10 When oil is hot, add the garlic & ginger & stir for 10 to 12 seconds- Do not brown.
  • Step #11 Add the bowl of liquids to the saucepan of garlic & ginger & heat until bubbling.
  • Step #12 Stir in the cornstarch mixture- Stir until sauce thickens.
