Clam Chowder Recipe

Ingredients
  • 2 c sliced fresh mushrooms
  • 4 celery ribs with leaves, sliced
  • 2 tbsps reduced-fat margarine*
  • 2 (10.75 oz) cans reduced-fat, reduced-sodium condensed cream of mushroom soup, undiluted
  • 1/4 tsp white pepper
  • 3 (6.5 oz) cans minced clams, with juice
  • 1 medium onion, sliced
  • 1/2 tsp salt
  • 6 medium unpeeled red potatoes, cubed
  • 1/2 c white wine or chicken broth
  • 1 (8 oz) bottle clam juice

Directions
  • Step #1 In a Dutch oven or soup kettle, saute the mushrooms, celery & onion in margarine until tender.
  • Step #2 In a bowl, whisk the soup, clam juice & wine or broth; stir in theto vegetable mixture.
  • Step #3 Add the potatoes, salt & pepper.
  • Step #4 Bring to a boil.
  • Step #5 Reduce heat; cover & let simmer for 25 mins.
  • Step #6 Add clams; cover & let simmer for 5-15 mins or until potatoes are tender.
