Black Bean And Red Pepper Salsa Recipe

Ingredients
  • 1 tsp Tabasco sauce (or to taste) .
  • 1/3 c white wine (fruity) .
  • 1 tbsp fresh lime juice or lemon juice .
  • 1 avocado, sliced for garnish (optional) .
  • 1 (15 oz) can black beans, drained & rinsed .
  • salt & freshly ground black pepper, to taste .
  • 2 tbsps olive oil .
  • 1 1/2 lbs red peppers, stemmed, seeded, sliced fine (4 medium) .
  • 1 c red onions, sliced fine .
  • 3 tbsps cilantro, sliced (fresh coriander) .
  • 1/2 tsp dried oregano .
  • 1 tbsp garlic, minced

Directions
  • Step #1 Heath olive oil in a 10" skillet over moderate heat.
  • Step #2 Add peppers & onion & saute until vegetables start to soften, about 3-4 mins.
  • Step #3 Add garlic & saute 1 min.
  • Step #4 Add wine & oregano & cook 3-4 more mins, until vegetables are tender, but still have bite.
  • Step #5 Remove from heat, allow this to cool slightly, tabasco, then stir in the beans, lime juice & cilantro.
  • Step #6 Add salt & pepper, to taste.
  • Step #7 Add garnishes, if desired.
