Ingredients
1/2 tsp hot pepper sauce .
1/8 tsp pepper .
8 oz elbow macaroni, cooked & drained .
1/4 c flour .
1/2 c evaporated skim milk .
2 c nonfat milk .
1/4 c butter .
12 oz low-fat sharp cheddar cheese, shredded
Directions
Step #1 In a saucepan, over low heat/flame, melt butter.
Step #2 Add flour; stir with a wooden spoon 3 mins or until sauce is frothy & taste of flour is gone.
Step #3 Gradually whisk in the milk & continue heating until sauce is just at the boiling point.
Step #4 Turn down the heat; let simmer a few mins.
Step #5 Add pepper & hot suauce but, don't use sauce too sparingly as it helps to bring out the taste of the cheese.
Step #6 Stir in the evaporated milk; simmer briefly or until the flavors are mixed.
Step #7 Stir 3/4 of the cheese into the simmering sauce & stirring until melted.
Step #8 Combine cheese sauce with the cooked macaroni & pour this into a 9 x 13 baking dish.
Step #9 Sprinkle top the remaining cheese over the top.
Step #10 Bake at 350 for 30 mintues.
