2 2/3 c dried corkscrew macaroni (rotini) or elbow macaroni .
3/4 c milk
Directions
Step #1 On a cutting board use a sharp knife to cut onion into small pieces (you should have 1/3 c).
Step #2 Reserve until Step 3.
Step #3 Tear cheese slices into bite-size pieces.
Step #4 Save until Step 5.
Step #5 Cook macaroni in a saucepan following the package directions, except add onion to water along with the uncooked macaroni so they cook together.
Step #6 (To test macaroni for doneness, let it cool slightly, remove one piece with a wooden spoon, & bite into it.
Step #7 The center will be soft, not chewy.

When macaroni is cooked, turn off burner.
Step #9 Remove saucepan from burner.
Step #10 Place colander in sink.
Step #11 Carefully pour macaroni mixture into the colander to drain water.
Step #12 Return warm macaroni mixture to saucepan.
Step #13 Use wooden spoon to stir in the American cheese, milk, & pepper.
Step #14 Put saucepan on a burner.
Step #15 Turn the burner to medium heat.
Step #16 Cook for 4 to 5 mins or until cheese is melted, stirring all the time.
Step #17 Turn off burner.
Step #18 Remove saucepan from burner.
Step #19 If mixture is too thick, stir in the 1 to 2 tbsps extra milk.
Step #20 Sprinkle top with Parmesan cheese, if you like.
Step #21 VEGETABLE STIR-INS: Add 1/2 c frozen peas or frozen mixed vegetables or 1 c frozen sliced carrots or frozen sliced broccoli to the saucepan along with the onion, macaroni, & water.
Step #22 MEAT STIR-INS: Add 1/2 c sliced cooked ham, sliced sliced pepperoni, sliced hot dogs, or sliced cooked chicken along with the cheese & milk.
Step #23 Serve with tossed salad greens with your favorite salad dressing & milk.
