Ingredients
3 jalapeno peppers, finely ground (I would use a mini chopper) .
1/2 tsp butter (optional) .
2 (3 oz) envelopes Certo .
6 1/2 c sugar, measured into separate bowl .
3 c juice (2 medium fully ripe pineapples, see directions below)
Directions
Step #1 BRING boiling-water canner, half-full with water, to simmer.
Step #2 Wash jars & screw bands in hot, soapy water; rinse with warm water.
Step #3 Pour boiling water over flat lids in saucepan off the heat.
Step #4 Let stand in hot water until ready to use.
Step #5 Drain jars well before filling.
Step #6 PARE & finely chop or grind pineapples.
Step #7 I prefer grinding because it releases the juices better.
Step #8 Place 3 layers of damp cheesecloth or jelly bag in large strainer over bowl.
Step #9 Pour prepared fruit into cheesecloth.
Step #10 Tie cheesecloth closedand let drip into bowl until dripping stops.
Step #11 Press carefully.
Step #12 Measure exactly 3 c juice into 6- or 8-quart saucepot.
Step #13 You should have enough juice, but if you don't you can add up to 1/2 c water, or unsweetened canned pineapple juice.
Step #14 Add finely ground peppers to juice.
Step #15 STIR sugar into juice in saucepot.
Step #16 Add butter to reduce foaming, if desired.
Step #17 Bring mixture to full rolling boil (a boil that doesn't stop bubbling when stirred) on high heat, stirring constantly.
Step #18 STIR in pectin quickly.
Step #19 Return to full rolling boil & boil exactly 1 min, stirring constantly.
Step #20 Remove from heat & skim off any foam with metal spoon.
Step #21 LADLE quickly into prepared jars, filling to within 1/8 inch of tops.
Step #22 Wipe jar rims & threads.
Step #23 Cover up with two-piece lids.
Step #24 Screw bands tightly.
Step #25 Place jars in a water bath canner, water must cover jars by 1 to 2 inches; add boiling water if needed.
Step #26 Cover up; bring water to gentle boil & process 5 mins.
Step #27 Remove jars & place upright on a towel to cool completely.
Step #28 After jars cool, check seals by pressing middle of lid with finger.
Step #29 (If lid springs back, lid is not sealed & refrigeration is necessary.
