Crisp Coconut Shrimp With Oriental Dipping Sauce Recipe

Ingredients
  • cayenne pepper .
  • 1/8 tsp salt .
  • 1 egg .
  • 2 tbsps sliced green onions .
  • 1 1/2 c sweetened flaked coconut .
  • salt .
  • oil (for frying) .
  • 1 lb approx. 31-40 large shrimp .
  • 1/2 c orange marmalade .
  • 1/3 c dry breadcrumbs .
  • 2 tbsps lime juice .
  • 2 tbsps cornstarch

Directions
  • Step #1 In a small bowl, mix marmalade, green onion, lime juice & cayenne pepper & 2/1/8 tsp salt; mix well.
  • Step #2 Set aside.
  • Step #3 In another small bowl, beat together egg, cornstarch & 1/8 tsp salt with a fork or wire whisk until smooth.
  • Step #4 In a shallow dish or bowl, mix coconut & bread crumbs.
  • Step #5 Dip shrimp in egg mixture; coat with mixd coconut & crumbs.
  • Step #6 Fry in oil in 3 to 4 batches until shrimp is golden brown.
  • Step #7 Drain on paper towels.
  • Step #8 Serve with Oriental Dipping Sauce.
