Mum's Pot Roast Recipe

Ingredients
  • 6 large carrots, halved lengthwise then cut into thirds crosswise .
  • 1/4 tsp pepper .
  • 1 tbsp oil .
  • herbs (usually including oregano & a bay leaf) .
  • 1/4 c flour .
  • 1-2 tbsp flour .
  • 1 c red wine vinegar or catsup or red wine .
  • 1/2 tsp salt .
  • 1 (3 lb) pot roast .
  • 6 medium potatoes, cut into large cubes .
  • 2 onions, cut into eighths

Directions
  • Step #1 Combine flour, salt & pepper in a paper bag.
  • Step #2 Add roast & shake to coat.
  • Step #3 In a dutch oven or large pot, brown roast on all sides in oil.
  • Step #4 Stuff vegetables in around the sides of the roast.
  • Step #5 Combine 1 c vinegar (or catsup or wine or a mixture) with herbs & pour this into the pot.
  • Step #6 Fill pan with enough water to cover roast & bring to a boil.
  • Step #7 Reduce heat to low & let simmer 1½-2 hrs until meat is falling-apart tender, adding water to the pot as needed.
  • Step #8 Remove meat & vegetables from the pot & keep warm.
  • Step #9 Add flour to pot liquid & continue to cook, stirring, until it thickens into gravy.
