Prosciutto And Asian Pear 'sushi' By Ming Tsai Recipe

Ingredients
  • 1/4 c rice vinegar .
  • 1 lime, juice of .
  • 2 Asian pears, peeled & julienned .
  • 8 slices prosciutto di Parma (thin slices) .
  • 1/4 c chives, batons (to garnish) .
  • fresh cracked black pepper .
  • 1/2 c balsamic vinegar

Directions
  • Step #1 In a non-reactive saucepan, mix vinegars & let simmer.
  • Step #2 Reduce by 60 to 70 percent until a syrupy consistency is achieved.
  • Step #3 Keep in mind that the syrup will thicken as it cools.
  • Step #4 In a bowl, mix julienned pears with lime juice & season this with pepper.
  • Step #5 Using a sushi mat lay out one or two slices of prosciutto.
  • Step #6 Lay the pear pieces across the bottom of the prosciutto.
  • Step #7 Roll very tightly.
  • Step #8 Drizzle some vinegar syrup on a plate in a zigzag pattern.
  • Step #9 Slice rolls like sushi & garnish with chives & cracked peppercorns.
