Low-fat Apple Cobbler Recipe

Ingredients
  • 6 tbsps hot water .
  • 1 tbsp butter or margarine .
  • 2 tsps baking powder .
  • 1/2 tsp salt .
  • prune puree .
  • 1 1/2 c flour .
  • 1 1/3 c pitted prunes .
  • 1 tsp baking soda .
  • 1 tbsp sugar, mixed with .
  • 1/3 c sugar .
  • 3 tbsps prune puree (see below) .
  • 1/2 tsp cinnamon .
  • 1/2 tsp cinnamon, for topping .
  • 3/4 c skim milk .
  • 1 (21 oz) can apple pie filling

Directions
  • Step #1 Prune puree:.
  • Step #2 In a food processor/blender, process prune & hot water til finely pureed.
  • Step #3 Preheat oven to 400°F.
  • Step #4 In large bowl, baking soda, baking powder, sugar, mix flour, salt & cinnamon.
  • Step #5 Add prune puree & butter cut in with pastry mixer until mixture resembles course crumbs.
  • Step #6 Mix in milk just to mix.
  • Step #7 Spread pie filling in even layer in a baking dish.
  • Step #8 Spoon batter over apples in 6 equal mounds.
  • Step #9 Sprinkle top with sugar-cinnamon mixture.
  • Step #10 Bake in centre of oven 35 mins until batter is baked through & springy to the touch.
  • Step #11 Serve warm with diabetic ice cream, or low fat ice cream if desired.
