Chocolate Pavlova With Raspberries Recipe

Ingredients
  • 1 tsp pure vanilla extract .
  • 6 oz raspberries .
  • Pavlova .
  • 6 large egg whites, room temperature .
  • 3 tbsps Dutch-processed cocoa powder .
  • Topping .
  • 1 tbsp sugar .
  • 1/4 tsp cream of tartar .
  • 1 tsp cornstarch .
  • 1 c heavy whipping cream .
  • 1 tsp white vinegar .
  • 1 1/4 c superfine sugar or sugar .
  • 2 oz bittersweet chocolate, sliced

Directions
  • Step #1 Preheat oven to 275 degrees, placing rack at the center of your oven.
  • Step #2 Place an 8 or 9 inch cake pan on a sheet of parchment paper & trace around the rim using a pen.
  • Step #3 Place the parcment on a cookie sheet penciled side down - facing the baking sheet.
  • Step #4 If you are using regular sugar, place it into the bowl of a food processor/blender & mix for 30 seconds to get a finer granule.
  • Step #5 Remeasure out 1 1/4 c & discard any excess.
  • Step #6 Using a mixer, whisk the egg whites until foamy.
  • Step #7 Add the cream of tartar & continue to beat on medium-high speed until they hold soft peaks.
  • Step #8 Add the sugar, a tbsp at a time, & continue to beat until the meringue holds stiff peaks.
  • Step #9 Gently fold in the vinegar & vanilla extract.
  • Step #10 Sift the cocoa powder & cornstarch over the top of the meringue and, using a large spatula, fold inches Lastly, fold in the sliced chocolate.
  • Step #11 Gently spread the meringue inside the circle drawn on the parchment paper, smoothing the edges.
  • Step #12 While spreading create a SMALL indentation in the center so that there will be a natural hollow for the raspberries & whipped cream.
  • Step #13 Bake for about 1 hr to 1 1/4 hrs or until the outside is dry.
  • Step #14 There will be small cracks on the surface but the center will still be soft & gooey.
  • Step #15 ) Shut the oven off, leave the door slightly open, & allow the meringue cool completely in the oven.
  • Step #16 Just before serving carefully place the meringue on a serving plate.
  • Step #17 Whip the cream until soft peaks form.
  • Step #18 Sweeten with the sugar & then mound the softly whipped cream into the center of the meringue.
  • Step #19 Arrange the raspberries on top of the cream.
  • Step #20 Serve as soon as possible.
