Dinner For Two, Please James! Recipe

Ingredients
  • 1/2 lemon, juice of .
  • 2-3 large roma tomatoes, peeled & sliced .
  • 1 lb large shrimp, peeled & deveined .
  • 2-4 garlic cloves, thinly sliced .
  • 1 medium onion, sliced medium to coarse .
  • 2 tbsps grated parmesan cheese .
  • 2 tbsps olive oil .
  • 1/4 c red wine .
  • black pepper, from mill to taste .
  • 1 tbsp dry tarragon .
  • 1 tbsp grated oregano .
  • 8 oz pasta, of your choice

Directions
  • Step #1 Heat olive oil in a deep skillet over med-heat/flame.
  • Step #2 Add garlic slices stirring constantly, until golden brown.
  • Step #3 Remove from heat & set aside.
  • Step #4 Add sliced onion & stir until clarified.
  • Step #5 Add sliced tomatoes with their juice; return garlic to mixture.
  • Step #6 Squeeze lemon juice by hand into mixture.
  • Step #7 Bring to a slow simmer & mix well.
  • Step #8 Add tarragon, oregano & parmesan cheese.
  • Step #9 Grind pepper from mill, to taste.
  • Step #10 Add red wine.
  • Step #11 Cover up & allow to simmer for about 10 mins.
  • Step #12 Uncover & allow to simmer until liquid is reduced to half.
  • Step #13 Add shrimp & cook uncovered until pink.
  • Step #14 In the meantime boil water to cook pasta al dente.
  • Step #15 Drain pasta & set aside -- When shrimp is pink, add pasta to sauce & mix well to coat.
  • Step #16 Divide between two pasta plates, spoon sauce & shrimps over noodles, & enjoy.
  • Step #17 Open another bottle of wine, & smile.
