Ingredients
400F g canned sliced tomatoes .
1 garlic clove, crushed .
500 g potatoes, peeled & cut into chunks .
1 tbsp shredded sage .
sea salt, to serve .
1 chili pepper, sliced .
1/2 tsp cayenne pepper .
1/4 c olive oil
Directions
Step #1 Cook potatoes in boiling salted water for 10 mins.
Step #2 Drain well.
Step #3 Meanwhile mix tomatoes, chili, garlic & cayenne in a saucepan.
Step #4 Spice up to taste.
Step #5 Heat carefully stirring.
Step #6 Heat oil in medium frying pan, add potatoes & fry for 10 mins until golden brown.
Step #7 Drain on paper towels.
Step #8 Stir sage through tomato sauce.
Step #9 Add potatoes & toss to coat.
Step #10 Sprinkle top with sea salt & serve.
