Singapore Noodles Recipe

Ingredients
  • 200 g ground pork .
  • 200 g Chinese barbecue pork (char sui) .
  • 1/4 c reduced-sodium soy sauce .
  • 2 tbsps mild curry paste .
  • 2 garlic cloves, crushed .
  • 250 g dried thin egg noodles .
  • 2 tbsps peanut oil .
  • 1 onion, finely sliced .
  • 2 small red Thai chile, seeded & finely sliced .
  • 200 g cooked shelled small shrimp .
  • 2 tbsps oyster sauce .
  • 4 eggs, lightly beaten .
  • 1 tbsp water .
  • 3 spring onions, sliced coarsely

Directions
  • Step #1 Cook noodles in large saucepan of boiling water, uncovered, until just tender; drain.
  • Step #2 Meanwhile, heat 2 tsps of the oil in wok, add half of the mixd eggs & water & swirl wok to make a thin omelette.
  • Step #3 Cook, til omelette is just set; remove this from wok, uncovered, roll omelette & cut into thin strips.
  • Step #4 Heat another 2 tsps of oil & repeat process with the remaining egg mixture.
  • Step #5 Heat remaining oil in wok, stir fry onion & garlic until onion softens; add curry paste, & stir fry til fragrant.
  • Step #6 Add minced pork & stir fry til changed in colour.
  • Step #7 Add bbq pork, prawns, spring onion, sauces, chilli & half the omelette; stir fry til heated through.
  • Step #8 Add noodles; toss carefully to mix & serve topped with remaning omelette.
