Apricot Orange Almond Jam Recipe

Ingredients
  • 2 lemons .
  • 5 c sugar .
  • 6 oz sliced almonds .
  • 2 1/2 tsps cinnamon .
  • 3 oranges .
  • 1 lb dried apricots

Directions
  • Step #1 Chop the apricots coarsly & put into a large bowl.
  • Step #2 Sprinkle top-on the grated zest of the oranges & the cinnamon.
  • Step #3 Squeeze the juice of the oranges, measure & add enough water to make 6-c total.
  • Step #4 Pour the liquid over the fruit, carefully mix, & set out overnight in a cool place (not in the fridge).
  • Step #5 The next day, simmer the apricots in a heavy pan until fruit is nicely tender; 1 to 2 hrs.
  • Step #6 Use a potato masher to crush fruit if desired.
  • Step #7 I like the apricots in larger chunks so I don't mash them.
  • Step #8 Add the sugar to the pan together with juice of the lemons & the almonds.
  • Step #9 Cook 'til sugar is melted, then fast-boil to a setting stage.
  • Step #10 (drip some on a plate, if a skin forms on top when cooled it's ready).
  • Step #11 Ladle into sterile jars, seal, & process in 10-min.
  • Step #12 water bath.
