Ingredients
  • 700 ml plain yogurt .
  • 115 g caster sugar .
  • 6 eggs .
  • 4 lemons, juice & rind of .
  • 115 g unsalted butter

Directions
  • Step #1 Put the eggs, butter, caster sugar & the lemon rind & juice in a pan.
  • Step #2 Cook carefully over a low heat, stirring until the mixture coats the back of the spoon.
  • Step #3 Leave to cool until luke warm.
  • Step #4 Whisk in the yoghurt.
  • Step #5 Put into the ice cream maker & churn until set.
