Diabetic Carrot Cake Recipe

Ingredients
  • 1 (8 oz) can crushed unsweetened pineapple (undrained) .
  • 1/4 c mayonnaise .
  • 8 tsps artificial sweetener .
  • Topping .
  • 1 c raisins .
  • 2 tsps cinnamon .
  • 1/2 c walnuts, sliced .
  • 2 c flour .
  • 1 c whipping cream .
  • 3 eggs .
  • 1/2 tsp ground ginger .
  • 1 tsp vanilla .
  • 1/2 tsp salt .
  • 1 tsp vanilla .
  • 2 c carrots, grated .
  • 2 tsps baking soda

Directions
  • Step #1 In a large bowl, mix flour, cinnamon, baking soda, ginger & salt.
  • Step #2 In another bowl beat eggs, mayonnaise.
  • Step #3 Gradually beat in flour mixture.
  • Step #4 Stir in remaining ingredients.
  • Step #5 Pour into a grease, floured 8 inch square cake pan.
  • Step #6 Bake 30 to 35 mins.
  • Step #7 350°F.
  • Step #8 Cool 10 mins.
  • Step #9 Remove from Pan.
  • Step #10 Cool completely.
  • Step #11 Prepare topping by beating whipped cream til thick.
  • Step #12 Add vanilla & sweetener.
  • Step #13 Spread over cake.
