Almond Filled Cookie Cake Recipe

Ingredients
  • 1 1/3 c sugar .
  • 2 2/3 c flour .
  • 1/2 tsp salt .
  • 1/2 c sugar .
  • 1 1/3 c butter, softened (do not use margarine) .
  • Filling .
  • 1 tsp grated lemon peel .
  • Crust .
  • 1 egg, slightly beaten .
  • 4 whole blanched almonds .
  • 1 egg .
  • 1 c finely sliced almonds

Directions
  • Step #1 Heat oven to 325.
  • Step #2 Place cookie sheet in oven to preheat.
  • Step #3 Grease 10 or 9 inch springform pan.
  • Step #4 In large bowl, mix all crust ingredients at lowish speed until dough forms.
  • Step #5 If desired, put in the fridge for easier handling.
  • Step #6 Divide dough in half; spread half in bottom of greased pan to form crust.
  • Step #7 In small bowl, mix all filling ingredients except whole almonds; mix well.
  • Step #8 Spread over crust to within 1/2 inch of sides of pan.
  • Step #9 Between 2 sheets of waxed paper, press remaining dough to 10 or 9 inch circle.
  • Step #10 Remove top sheet of waxed paper; place dough over filling.
  • Step #11 Remove waxed paper; press dough into place.
  • Step #12 Top with whole almonds.
  • Step #13 Place cake on preheated cookie sheet.
  • Step #14 Bake at 325F for 65-75 mins or until top is lightl golden brown.
  • Step #15 Cool 15 mins; remove sides of pan.
  • Step #16 Cool completely.
