Chicken And Sweet Potato Stew Recipe

Ingredients
  • 1/4 tsp ground ginger .
  • 1 garlic clove, minced .
  • 1 medium onion, quartered & sliced thin .
  • 12 oz boneless skinless chicken breast halves, cut into 1-inch pieces (about 1 1/2 breasts) .
  • 1 tbsp oil .
  • 29 oz canned low-sodium tomatoes, drained & sliced .
  • 1 tbsp sliced fresh basil .
  • 2 c cubed peeled sweet potatoes, 1/2-inch pieces .
  • 2 c green beans, fresh or frozen .
  • 3 tbsps all-purpose flour .
  • 1 1/2 c apple juice or apple cider

Directions
  • Step #1 Begin heating oil in large saucepan or soup pot.
  • Step #2 Dredge chicken in flour & add to hot oil.
  • Step #3 Cook 3 mins or just until browned.
  • Step #4 Remove chicken from the pan.
  • Step #5 Without cleaning the pan, add onions & garlic & cook two mins until tender.
  • Step #6 If the pan becomes dry, add some apple juice or cider to the pan.
  • Step #7 If you are using fresh green beans, clean & trim to 1 or 2 inch pieces.
  • Step #8 Remember to drain the tomatoes.
  • Step #9 Stir in the remaining apple juice, tomatoes, sweet potatoes, basil & chicken.
  • Step #10 Bring to a boil.
  • Step #11 Reduce heatand let simmer 30 to 35 mins or until chicken is no longer pink & potatoes are tender, stirring every once in awhile.
