Polish Zeberka Wieprzowena Z Kapusta (spareribs And Cabbage) Recipe

Ingredients
  • 2 tsps instant beef bouillon .
  • 1 small head green cabbage, cut into 6 wedges .
  • 1 bay leaf .
  • 1 large onion, sliced .
  • 1 large carrot, sliced .
  • 1 tbsp vegetable oil .
  • 1/2 c vinegar .
  • 4 1/2 lbs fresh pork spareribs, cut into 6 pieces .
  • 2 c water .
  • 1/2 tsp caraway seeds .
  • 1/2 tsp salt .
  • freshly-ground pepper .
  • 1/4 tsp fresh coarse ground black pepper

Directions
  • Step #1 Heat oil in Dutch oven until hot.
  • Step #2 Cook pork spareribs, over med-heat/flame until brown on all sides, a few pieces at a time, about 15 mins; drain fat.
  • Step #3 Add onion, carrot, caraway seed, bouillon, salt, 1/4 tsp pepper & the bay leaf.
  • Step #4 Pour water & vinegar over pork mixture.
  • Step #5 Heat to boiling; reduce heat.
  • Step #6 Cover up & let simmer 1 1/2 hrs.
  • Step #7 Add cabbage; sprinkle with pepper.
  • Step #8 Cover up & let simmer until cabbage is tender, about 15 mins.
  • Step #9 Remove bay leaf.
  • Step #10 Arrange spareribs & vegetables on serving platter.
  • Step #11 Garnish with minced parsley if desired.
