Quick Baked Bean Soup (vegetarian) Recipe

Ingredients
  • 1 (28 oz) can vegetarian baked beans, seasoned with onions, maple syrup & brown sugar (or similar canned beans) .
  • 1 tsp spicy brown mustard .
  • 1/2 tsp chili powder .
  • 3-4 tofu hot dogs, cut into 1/4-inch slices .
  • salt & pepper, to taste .
  • 1 3/4 c vegetable broth .
  • 1/2 c green bell peppers or red bell peppers, sliced .
  • 1 tsp vegetable oil

Directions
  • Step #1 In a large soup pot, saute the hot dogs slices in the oil.
  • Step #2 Brown about 3 mins.
  • Step #3 Add the remaining ingredients except for the bell pepper.
  • Step #4 Bring to an almost boil reduce heat & stir in the the sliced green bell pepper.
  • Step #5 Fnally, reduce heat to simmer, cover the soup pot & cook on low for about 10-15 mins.
  • Step #6 Adjust seasonings if necessary.
  • Step #7 Serve soup warm with dinner rolls to sop up the broth.
  • Step #8 Crock pot directions:.
  • Step #9 Saute the hot dogs in the oil then add them along with all the other ingredients to the crock pot.
  • Step #10 Cook on LOW for 4 hrs.
