Buttermilk Pecan Chicken Breasts Recipe

Ingredients
  • 1 egg, beaten .
  • 1 tsp sesame seeds .
  • 1/2 c buttermilk .
  • 1 1/2 tsps paprika .
  • 1 pinch black pepper .
  • 1/4 c margarine, melted .
  • 1/2 c flour .
  • 6 chicken breasts (with or without bones) .
  • nonstick cooking spray .
  • 1/2 c finely sliced pecans .
  • 1 tsp salt .
  • 1/4 c coarsely sliced pecans

Directions
  • Step #1 Preheat oven to 375 degrees.
  • Step #2 Coat a 13-by-9-by-2-inch pan with cooking spray.
  • Step #3 Mix buttermilk & egg in small bowl.
  • Step #4 Combine flour, paprika, sesame seeds, 1/2 c finely sliced pecans, salt & pepper in a medium bowl.
  • Step #5 Dip chicken in buttermilk mixture then coat with flour mixture.
  • Step #6 Place in prepared pan.
  • Step #7 Scatter coarsely sliced pecans over.
  • Step #8 Pour margarine over.
  • Step #9 Cover up & bake 20 mins.
  • Step #10 Uncover & bake 10 mins longer for boneless chicken & 30 mins longer for bone-in, until the chicken is cooked through & golden brown.
  • Step #11 PER SERVING: 368 calories; 32 g protein; 11 g carbohydrates; 22 g fat (3 g saturated); 105 mg cholesterol; 590 mg sodium; 2 g fiber.
