Beef And Okra Jamaican Stir Fry
Ingredients
1 tsp dark sesame oil (roasted) .
1-2 tbsp peanut oil or grapeseed oil .
3 tbsps soy sauce .
2 tbsps orange juice .
1 1/2 tsps cornflour .
1/2 lb tender lean beef, sliced into thin strips, for stir-frying .
1 lb tender young asparagus, trimmed & sliced diagonally into 2 inch pieces (approx. 16 to 20 stalks) .
2 tsps minced fresh ginger
Directions
Step #1 Combine the first four ingredients in a pot.
Step #2 Toss in the beef strips.
Step #3 Mix well & cover the pot.
Step #4 Refrigerate the mixture & allow it to marinate for atleast 30 mins to many hrs.
Step #5 Combine this marinade with enough water to make 1/3 c.
Step #6 Add cornflour to this mixture, mix thoroughly well & keep aside.
Step #7 Add half of the peanut oil or grapeseed oil to a wok & heat on high flame.
Step #8 Fold in the asparagus & stir-fry on medium heat, tossing just until the pieces are heated through & their colour brightens.
Step #9 Remove from the wok & keep aside.
Step #10 Add the remaining oil to the wok.
Step #11 Fold in the beef strips & stir-fry for a min until the raw colour of the beef has gone.
Step #12 Add the reserved marinade mixture to the wok.
Step #13 On high flame, cook this until the sauce begins to thicken & turn glossy.
Step #14 Add the reserved asparagus to the wok.
Step #15 Toss it to mix with the beef & sauce.
Step #16 Cook for 30 seconds more or until the beef is cooked to taste.
Step #17 Serve as soon as possible.
