5 leeks, thoroughly washed, white part of, sliced into matchsticks .
1/3 c dry white wine .
salt, to taste .
6 filo pastry, frozen, defrosted .
250 g freshly grated parmesan cheese .
silicon paper, to line the baking sheet .
1 tbsp unsalted butter .
1/2 bunch chives, sliced .
fresh ground pepper, to taste
Directions
Step #1 Preheat the oven to 160°C.
Step #2 Brush the pastry sheets with a little melted butter, one at a time.
Step #3 Then place one sheet on a lightly greased, baking sheet lined with silicon paper.
Step #4 Sprinkle top evenly with Parmesan & place another sheet on top of the first sheet.
Step #5 Repeat this process with the remaining filo, leaving the top sheet plain, & cook in the oven for 10-12 mins until golden brown.
Step #6 At the same time, melt the butter In a large-ish non-stick pan & carefully sauté the leeks & garlic until they softish, taking care not to allow them to brown.
Step #7 Add the wine & allow it to almost completely reduce; then add the chives, season the leek mixture to taste & mix well.
Step #8 When pastry is ready, remove it from the oven & carefully press down the centre with a spatula, leaving a slightly thicker outer border.
Step #9 Spread the leek mixture evenly over the top of the pastry & sprinkle it with a little more parmesan.
