Make -ahead Chicken (or Turkey) Casserole Recipe

Ingredients
  • 3-4 c cubed chicken breasts or turkey breast .
  • salt & pepper .
  • 3 tbsps grated parmesan cheese .
  • parmesan cheese sauce .
  • 2 c chicken broth or water .
  • 1/2 c sour cream .
  • 2 tbsps sliced onions (I used more) .
  • 3 tbsps flour .
  • 1/4 tsp salt .
  • 1 c milk .
  • 1 tbsp sliced fresh basil or 3/4 tsp dry basil .
  • 1/4 c slivered almonds .
  • 1/2 lb mushrooms, sliced .
  • 2-3 tbsps butter or margarine .
  • 3/4 c chicken broth .
  • 1/2 red bell pepper, seeded & sliced .
  • 3 tbsps butter or margarine .
  • 2 tbsps white wine .
  • 1/4 c sliced parsley .
  • 1 c uncooked long-grain rice

Directions
  • Step #1 In a saucepan, bring broth to a boil.
  • Step #2 Add rice,and cook on low till liquid is absorbed - about 20 mins.
  • Step #3 Place in a lightly oiled or sprayed 4-quart casserole.
  • Step #4 While rice is cooking, make Parmesan Cheese sauce & set aside.
  • Step #5 Preheat oven to *350.
  • Step #6 In a skillet melt butter.
  • Step #7 Add the mushrooms.
  • Step #8 bell pepper,onion,and almonds.
  • Step #9 Saute until soft-about 5 mins.
  • Step #10 Stir in parsley & basil.
  • Step #11 Add to the rice in the casserole along with the chicken & Parmesan Cheese sauce & mix well.
  • Step #12 Spice up with salt & pepper.
  • Step #13 Bake,covered, until bubbly - about 45 mins.
  • Step #14 Serve as soon as possible.
  • Step #15 PARMESAN CHEESE SAUCE.
  • Step #16 In a saucepan over med-heat/flame, melt butter or margarine.
  • Step #17 Add flour & salt & stir until mixed.
  • Step #18 Add broth & stir until slightly thickened.
  • Step #19 Add milk,wine & Parmesan cheese, & stir until smooth & flavors are mixed - about 2 mins.
  • Step #20 Remove from heat & stir in the sour cream.
