Cheese Blintzes With Blueberry Sauce Recipe

Ingredients
  • 1 lb small curd cottage cheese .
  • 2 tbsps sugar .
  • sour cream .
  • 1/2 tsp vanilla .
  • 1 1/2 c flour .
  • 2 c fresh blueberries, picked over .
  • 1 tbsp lemon juice .
  • shortening .
  • 1 tsp salt .
  • 2/3 c milk .
  • Blueberry Sauce .
  • 1/3 c sugar .
  • 5 eggs .
  • 1/4 tsp salt .
  • 1 tsp vanilla .
  • Blintzes

Directions
  • Step #1 Make sauce: Wash & crush berries.
  • Step #2 Mix in sugar through salt & 1¼ c water & put in saucepan.
  • Step #3 Bring to a boil & boil 1 min.
  • Step #4 Remove from heat & stir in the vanilla.
  • Step #5 Chill.
  • Step #6 Make blintzes: Combine flour & salt, add 1 c water & mix until smooth.
  • Step #7 Add 4 eggs & beat well.
  • Step #8 Add milk & mix to a thin batter.
  • Step #9 Heat a small amount of shortening in a 6" skillet.
  • Step #10 Pour in ¼ c batter & cook slowly until pancake is lightly browned on bottom & set on top.
  • Step #11 Turn out with browned side up.
  • Step #12 Repeat, making about 18 pancakes.
  • Step #13 Using a hand mixer, mix cheese through vanilla with remaining egg.
  • Step #14 Put a spoonful of cheese mixture in center of each pancake, fold in ends & roll up.
  • Step #15 Brown in a small amount of hot shortening.
  • Step #16 Serve topped with a dollop of sour cream with cold blueberry sauce over the top.
