Turkey Meatballs With Spaghetti Squash Recipe

Ingredients
  • 1/4 c grated onions .
  • 1/4 c fat-free low-sodium chicken broth .
  • 1/3 c whole wheat bread crumbs .
  • 1 spaghetti squash (12 to 16 oz) .
  • 2 egg whites .
  • 1 tsp dried oregano .
  • 1/2 tsp fennel seeds .
  • 1 (14 1/2 oz) can low-sodium crushed tomatoes .
  • 1/2 tsp red pepper flakes .
  • 1/3 c minced green onions .
  • 1 tsp garlic powder .
  • 1 lb lean ground turkey (93% lean) .
  • 2 1/2 tbsps minced flat leaf parsley .
  • 1 tsp dried thyme

Directions
  • Step #1 Mix bread crumbs, parsley, garlic, red pepper, onion, thyme & fennel seed in bowl.
  • Step #2 Mix ground turkey with egg whites in large bowl, & add seasoned crumbs.
  • Step #3 Knead mixture well.
  • Step #4 Cover up & chill meat 10 mins.
  • Step #5 Preheat broiler.
  • Step #6 Split squash in half.
  • Step #7 Remove seeds.
  • Step #8 Place in glass baking dish, cut side down.
  • Step #9 Add 3 to 4 tbsps water.
  • Step #10 Microwave on HIGH 10 to 12 mins, or until fork-tender.
  • Step #11 Set aside to cool.
  • Step #12 Form 20 meatballs with chilled turkey.
  • Step #13 Put meatballs on pan; broil 4 to 5 mins.
  • Step #14 Remove pan, turn meatballs over, & cook 4 mins more.
  • Step #15 Mix tomatoes & broth in 12 inch skillet; simmer over low heat/flame.
  • Step #16 Add meatballs, oregano, basil & green onion.
  • Step #17 Stir & cook this until hot, about 10 mins.
  • Step #18 Scrape squash into strands onto serving plate.
  • Step #19 Top with sauce & meatballs.
