I-tim Ma-muang { Mango Ice Cream} Recipe

Ingredients
  • 1 large ripe mango, plus extra slices for garnish (about 1 lb) .
  • 1 tsp vanilla extract .
  • 3/4 c milk .
  • 2 egg yolks .
  • 2/3 c sugar .
  • 2 c heavy cream

Directions
  • Step #1 Ina heavy-bottomed medium saucepan, beat egg yolks & sugar together.
  • Step #2 stir in the milk until well mixd.
  • Step #3 Cook medium heat, stirring constanly with a whisk until thick enough to coat the back of a spoon, about 10 mins.
  • Step #4 Remove pan from heat, cover, & let cool.
  • Step #5 stir in the heavy cream & vanilla until well mixd.
  • Step #6 cover & refigerate untill cold.
  • Step #7 Peel & cut Mango.
  • Step #8 Remove all flesh & discard seed.
  • Step #9 In a food processor/blender, process mango flesh untill slightly chunky.
  • Step #10 Stir Mangointo cold custard.
  • Step #11 Turn Mixture into an ice cream maker & freeze according to manufacturer's directions.
  • Step #12 Garnish scoops of ice cream with mango slices.
