Albanian Walnut Cake With Lemon Glaze Recipe

Ingredients
  • 1 c sugar .
  • 1/2 c butter, at about room temp .
  • 2 c flour .
  • 3/4 c sugar .
  • Glaze .
  • 1/4 c fresh lemon juice .
  • 1 cinnamon stick (or 1/2 tsp ground cinnamon) .
  • Cake .
  • 1/3 c plain yogurt .
  • 1 tsp baking soda .
  • 1 c walnuts, toasted & finely sliced .
  • 1 tbsp freshly grated lemon rind .
  • 3/4 c water .
  • 1 dash ground cloves .
  • 1/2 tsp cinnamon .
  • 1 tsp baking powder .
  • 1/4 tsp ground allspice .
  • 2 eggs, lightly beaten .
  • 1/3 c buttermilk (or extra 1/3 c yogurt)

Directions
  • Step #1 Preheat oven to 350°F.
  • Step #2 Cream together the butter & sugar until light & fluffy, & then mix in the eggs.
  • Step #3 Blend the yogurt with the buttermilk.
  • Step #4 Sift together the cake dry ingredients & add them alternating with the yogurt mixture into the egg mixture.
  • Step #5 Stir in the lemon rind & walnuts.
  • Step #6 Pour the batter into a buttered 9X13 baking pan & bake for 30-40 mins until a toothpick inserted into the center comes out clean.
  • Step #7 The cake will still be moist.
  • Step #8 Make the glaze by simmering together all the ingredients, covered, for about 15 mins.
  • Step #9 Remove the cinnamon stick.
  • Step #10 When the cake is done, remove it from the oven, turn off the oven, pour the glaze over the hot cake & return it to the oven for about 10 mins.
  • Step #11 Cut the cake into squares & serve it warm or cool.
