Step #1 Heat the coconut milk in a medium saucepan over med-heat/flame, until it thickens a little & becomes smooth & fragrant, stirring every once in awhile, about 5 mins.
Step #2 Meanwhile, season the ground beef with the salt & shape it into meatballs.
Step #3 Use about 1 T for each one, & place them on a plate.
Step #4 Add the curry paste to the saucepan & cook about 3 mins more, mashing & stirring to dissolve the paste into the coconut milk.
Step #5 Add the meatballs & cook, turning carefully to coat, 1 to 2 mins.
Step #6 Increase the heat to medium-high, & add the water, fish sauce, bring to a boil, & sugar.
Step #7 Simmer, until the meatballs are cooked through & the sauce is smooth, stirring carefully now & then, about 5 mins.
Step #8 Remove from heat, transfer to a serving bowl, & serve hot or warm.
