Thai Meatballs In Curry Sauce Recipe

Ingredients
  • 2 tbsps panaeng curry paste or red curry paste .
  • 1 1/2 c unsweetened coconut milk .
  • 1 tbsp fish sauce .
  • 1 lb ground beef .
  • 1/2 tsp salt .
  • 1 tbsp brown sugar .
  • 1/2 c water

Directions
  • Step #1 Heat the coconut milk in a medium saucepan over med-heat/flame, until it thickens a little & becomes smooth & fragrant, stirring every once in awhile, about 5 mins.
  • Step #2 Meanwhile, season the ground beef with the salt & shape it into meatballs.
  • Step #3 Use about 1 T for each one, & place them on a plate.
  • Step #4 Add the curry paste to the saucepan & cook about 3 mins more, mashing & stirring to dissolve the paste into the coconut milk.
  • Step #5 Add the meatballs & cook, turning carefully to coat, 1 to 2 mins.
  • Step #6 Increase the heat to medium-high, & add the water, fish sauce, bring to a boil, & sugar.
  • Step #7 Simmer, until the meatballs are cooked through & the sauce is smooth, stirring carefully now & then, about 5 mins.
  • Step #8 Remove from heat, transfer to a serving bowl, & serve hot or warm.
