Ingredients
1 tbsp active dry yeast .
1/4 tsp salt .
2 c water, warmed .
1 tbsp sugar .
5 1/2 c all-purpose flour or bread flour
Directions
Step #1 In a large bowl, mix the yeast with the warm water & stir in the sugar until dissolved.
Step #2 Add the salt & the flour, one c at a time.
Step #3 Knead bread for about 5-10 mins.
Step #4 Place bread In a large-ish bowl sprayed with olive oil spray & turn to coat.
Step #5 Cover up with a damp cloth & place this in(inactive/not hot) oven to rise for one hr, or until dough has doubled in size.
Step #6 (If the kids really can't wait, 45 mins works too!) Punch down the bread & let the kids shape it, or put it into two loaf pans.
Step #7 I recommend brushing with an egg mixed with a tbsp of water because it makes the bread taste better & makes it golden & crispy on the outside.
Step #8 Let the dough rise for another half hr (you can skimp on this to 20 mins again if you have to!).
Step #9 Preheat the oven to 400F degrees & bake for 25 mins.
Step #10 Serve with margarine mixed with honey (about 2-3 tbsps, to taste) & brown sugar (ditto, but packed).
Step #11 To store this bread, wrap very tightly in several layers of foil wrap, or put In a large-ish Ziploc bag & seal.
Step #12 But, it's best warm & served the same day -- however putting chunks in the microwave for 10 seconds if it's a day old helps, too.

Step #16 Even for a health nut like I usually am, using whole-wheat flour exclusively in this recipe gives it a bad reputation.
