Vegan Niter Kebbeh (ethiopian Butter) Recipe

Ingredients
  • 2 minced garlic cloves .
  • 1/8 tsp nutmeg .
  • 1/4 tsp ground fenugreek .
  • 1 tbsp fresh basil .
  • 1/4 c onions .
  • 1 cinnamon stick .
  • cheesecloth .
  • 4 cardamom seeds, crushed .
  • 2 whole cloves .
  • 1/2 lb olive oil .
  • 1/2 lb margarine .
  • 1/2 tsp turmeric .
  • 2 tsps fresh grated ginger

Directions
  • Step #1 1.
  • Step #2 Chop onions.
  • Step #3 2.
  • Step #4 In a soup pot slowly the heat the oil & margarine to bubbling.
  • Step #5 3.
  • Step #6 When the top is covered with foam add the other ingredients & reduce to simmer for 45 to 60 mins.
  • Step #7 4.
  • Step #8 Take the pot off the heat, & pour through a cheesecloth into a heat-resistant container.
  • Step #9 Discard the spices & solids.
  • Step #10 5.
  • Step #11 Cover up tightly & store this in the refrigerator for up to 2 months.
