1 tbsp capers, rinsed & drained (mix with other ingredients, carefully, so you don't break them up) .
1/2 tsp fresh ground pepper .
2 stalks green onions, green part only, sliced thin .
1 baguette, slice 1/2 inch slices .
1 1/2-1 3/4 oz fresh parmesan cheese, sliced thinly (I use a potato peeler) .
2-3 garlic cloves, whole .
2 tbsps extra virgin olive oil
Directions
Step #1 Place baguette slices, evenly, on baking sheet.
Step #2 Place under broiler or bake in 350 degree oven, until lightly browned (about 4-5 mins) turn & broil or bake for another 4-5 mins or until lightly brown.
Step #3 Remove & set aside until cool enough to handle.
Step #4 Take clove of garlic & rub each slice of bread on one side.
Step #5 Set aside on serving platter.
Step #6 Combine the next 4 ingredients & set aside.
Step #7 Spread each baguette slice with Kalamata olive mixture, slice of tomato, thin slices of Parmesan cheese, sprinkle of green onion, & top this with a drizzle of olive oil.
