Shrimp Soup With Ramen Noodles Recipe

Ingredients

1/8 tsp pepper .
1/2 tsp chili powder .
1/4 c sliced fresh cilantro (optional) .
16 oz salsa .
15 oz black beans, drained & rinsed .
1 lb deveined medium shrimp .
3 c water .
1/8 tsp cumin .
2 (3 oz) packages shrimp flavor ramen noodle soup .
1 tbsp lemon juice .
2 c frozen corn

Directions

Step #1 Thaw shrimp, if frozen, then peel & devein shrimp.
Step #2 In a medium bowl mix lemon juice, chili powder, cumin & pepper.
Step #3 Add shrimp & toss to coat.
Step #4 Let shrimp stand for 20 mins, stirring occassionaly.
Step #5 Meanwhile, bring water to boil In a large-ish saucepan.
Step #6 Break noodles into bite-sized pieces.
Step #7 Stir 1 seasoning packet & the broken noodles in the water.
Step #8 Discard remaining seasoning packet.
Step #9 Return to boiling & cook for 1 min.
Step #10 Add the shrimp & cook 1 to 2 mins longer, or until shrimp turns pink.
Step #11 Stir in salsa, beans & corn & heat through.
Step #12 To serve, top each serving with cilantro if desired.
