Roasted Chicken, Zucchini & Ricotta Sandwiches On Foccacia Recipe

Ingredients
  • 1 (15 oz) container whole milk ricotta cheese .
  • 4 pieces focaccia bread, halved (large piece) .
  • 1/4 c grated parmesan cheese .
  • grated lemon peel .
  • salt .
  • 2 medium zucchini, shredded .
  • 1 tbsp olive oil .
  • 2 roma tomatoes, thinly sliced .
  • 4 purchased cooked chicken breasts, skinned, boned & sliced thin

Directions
  • Step #1 Mix zucchini & salt in medium bowl.
  • Step #2 Transfer mixture to colander that is set over a bowl.
  • Step #3 Let zucchini stand & drain for 15 mins.
  • Step #4 Rinse & drain zucchini & squeeze dry.
  • Step #5 Heat oil in large skillet.
  • Step #6 Add zucchini to skillet & saute till tender.
  • Step #7 Transfer to bowl to slightly cool.
  • Step #8 Add ricotta, parmesan & lemon peel to zucchini.
  • Step #9 Stir & season this with salt & pepper.
  • Step #10 Preheat broiler.
  • Step #11 Arrange focaccia slices of baking sheet.
  • Step #12 Broil bread just until toasted.
  • Step #13 Spread ricotta mixture generously over toasted bread.
  • Step #14 Broil ricotta mixture on bread just until ricotta gets brown spots.
  • Step #15 Top ricotta with tomato slices, then with sliced chicken.
  • Step #16 Sprinkle top with salt & pepper.
  • Step #17 Cover up with remaining bread slices.
  • Step #18 Serve.
