Grilled Italian Chicken Salad Recipe

Ingredients
  • 2 plum tomatoes, sliced (Roma, 2/3 c) .
  • 1 (2/3 oz) envelope Italian salad dressing mix .
  • 1/3 c raspberry vinegar .
  • 6 c bite-size pieces mixed salad greens .
  • 1/4 c water .
  • 4 boneless skinless chicken breast halves (about 1 1/4 lbs) .
  • 2 tbsps balsamic vinegar .
  • 1 tbsp olive oil

Directions
  • Step #1 In medium bowl, mix vinegars & water.
  • Step #2 Stir in dressing mix.
  • Step #3 Stir in oil.
  • Step #4 Divide dressing mixture in half.
  • Step #5 Place chicken in shallow glass or plastic dish or heavy-duty resealable plastic food-storage bag.
  • Step #6 Pour half of the dressing mixture over chicken; turn chicken to coat.
  • Step #7 Cover up dish or seal bag & put in the fridge 15 mins.
  • Step #8 Cover up & put in the fridge remaining dressing mixture.
  • Step #9 Heat coals or gas grill for direct heat.
  • Step #10 Remove chicken from marinade; reserve marinade.
  • Step #11 Cover up & grill chicken over med-heat/flame 15 to 20 mins, turning & brushing with marinade every once in awhile, until juice of chicken is clear when center of thickest part is cut.
  • Step #12 Discard any remaining marinade.
  • Step #13 Cut chicken into slices.
  • Step #14 Serve chicken on salad greens with remaining dressing mixture.
  • Step #15 Top with tomatoes.
