Vegetarian Chili With Black Soybeans Recipe

Ingredients
  • 15 oz canned black soybeans, drained & rinsed .
  • 1 tsp dried oregano .
  • 2 tbsps butter (1/4 stick) .
  • 4 tbsps butter (1/2 stick) .
  • 1/2 c sliced onions or 2 tsps dried onions .
  • 2 tbsps olive oil or coconut oil .
  • pepper, to taste .
  • 2 tbsps chili powder .
  • 1/2 c stock or broth .
  • salt, to taste .
  • 1 1/4 c canned crushed tomatoes

Directions
  • Step #1 Heat a small skillet on midium-low.
  • Step #2 Add the oil & butter.
  • Step #3 When the butter bubbles (do not brown), saute the onion until soft.
  • Step #4 Turn heat to low & add the chili powder & oregano.
  • Step #5 Stir for about 2 mins.
  • Step #6 Add the beans & stir.
  • Step #7 Add all of the other ingredients & let simmer the chili slowly, covered, for about 1 hr, sitrring every once in awhile.
  • Step #8 Adjust seasonings & serve.
