Ingredients
  • 1/4 c pecans, sliced .
  • 1 tsp cinnamon .
  • 1/4 c all-purpose flour .
  • Cake Ingredients .
  • 1/2 c brown Sugar Twin .
  • 1 c whole wheat pastry flour .
  • Topping Ingredients .
  • 1 tsp baking soda .
  • 3 tsps baking powder .
  • 1/4 c light cholesterol-free margarine .
  • 3/4 c low-fat buttermilk .
  • 1/2 tsp salt .
  • 1/4 c egg substitute .
  • 1/2 c sugar substitute, like Splenda .
  • 1/2 c cholesterol-free margarine .
  • 1/2 c quick-cooking oatmeal, uncooked .
  • 1 c all-purpose flour .
  • 2 c blueberries

Directions
  • Step #1 Preheat the oven to 350 degrees.
  • Step #2 Spray a 9/13 pan with non-stick cooking spray.
  • Step #3 Cream the margarine & sugur substitute with an electric mixer.
  • Step #4 Add the egg & mix well.
  • Step #5 In a separate bowl, mix together flours, baking powder, soda & salt.
  • Step #6 Add to the creamed mixture alternately with the buttermilk.
  • Step #7 Mix until smooth.
  • Step #8 Gently stir in the the blueberries.
  • Step #9 (Coat the blueberries with a little flour berore adding to prevent the batter from turning grey.
  • Step #10 ).
  • Step #11 Spread better into the prepared pan.
  • Step #12 The batter will be stiff.
  • Step #13 For the topping, mix the rest of the ingredients with a fork until they resemble coarse crumbs.
  • Step #14 Sprinkle top over the batter.
  • Step #15 Bake for 30-35 mins or until toothpick inserted in center comes out clean.
