Mexican Polenta Pie Recipe

Ingredients
  • 1 tsp chili powder .
  • 15 oz refried beans (fat free or Veg.) .
  • 6 oz tomato paste .
  • 3 2/3 c water .
  • 1 tbsp sugar substitute (I like splenda) .
  • 1 lb ground turkey .
  • 1 medium onion .
  • 10 oz canned sliced tomatoes .
  • 2 tsps olive oil .
  • 2 tsps cumin .
  • 3 crushed garlic cloves .
  • 1 green pepper .
  • 1 jalapeno pepper, sliced .
  • 1 1/2 c yellow cornmeal

Directions
  • Step #1 Preheat oven at 450 degrees.
  • Step #2 Combine corn meal & water in saucepan.
  • Step #3 Cook until thickened, stirring frequently.
  • Step #4 Spray 9x 13 pan with cooking spray & bake for 15 mins.
  • Step #5 Brown turkey, sliced pepper,Jalapeno pepper, garlic, sliced onion, & olive oil.
  • Step #6 Add splenda,chilli powder, cumin, salt & pepper.
  • Step #7 Add tomato paste & tomatoes & let simmer for 10 mins.
  • Step #8 Spread refried beans on polenta crust, & top this with meat mixture.
  • Step #9 Top with low or fat free mexican or cheddar cheese & bake for 15 mins.
