Ingredients
  • 1/4 c sugar
  • 1 tsp vanilla extract
  • 1 tsp grated lemon peel
  • FILLING:
  • 1/4 c whipping cream
  • 3 tbsps all-purpose flour
  • 1 3/4 c sugar
  • 1/4 tsp salt
  • 1/4 c finely sliced pecans
  • 5 (8 oz) packages cream cheese, softened
  • 6 tbsps cold butter (no substitutes)
  • 1 egg yolk
  • 2 egg yolks
  • 4 eggs
  • 1/2 tsp vanilla extract
  • 3/4 c all-purpose flour

Directions
  • Step #1 In a bowl, sugar, pecans & lemon peel, mix the flour, cut in butter until crumbly.
  • Step #2 Combine egg yolk & vanilla; stir in theto flour mixture.
  • Step #3 Press onto the bottom of a greased 10-in.
  • Step #4 springform pan.
  • Step #5 Bake at 400F degrees F for 8-11 mins or until edges are lightly browned.
  • Step #6 Cool on a wire rack.
  • Step #7 Fill a 13-in.
  • Step #8 x 9-in.
  • Step #9 x 2-in.
  • Step #10 baking dish with 8 c water; place on lowest oven rack.
  • Step #11 Reduce heat to 325F degrees F.
  • Step #12 In a mixing bowl, beat cream cheese until smooth.
  • Step #13 Gradually beat in sugar.
  • Step #14 Add the flour, vanilla & salt.
  • Step #15 Combine eggs & egg yolks; add to cream cheese mixture just until mixd.
  • Step #16 Beat in cream just until mixd.
  • Step #17 Pour over crust.
  • Step #18 Bake on middle rack at 325F degrees F for 70-75 mins or until center is almost set (top of cheesecake will crack).
  • Step #19 Cool on a wire rack for 10 mins.
  • Step #20 Carefully run a knife around edge of pan to loosen.
  • Step #21 Cool 1 hr longer.
  • Step #22 Refrigerate overnight.
  • Step #23 Remove sides of pan.
