Pineapple-cheddar Casserole Recipe

Ingredients
  • 20 oz pineapple chunks (preferably juice packed) .
  • 2 tbsps all-purpose flour .
  • 2 tbsps sugar .
  • 1 1/4 c cheddar cheese (shredded) .
  • 1 1/2 c Ritz crackers (crushed, about 25) .
  • 3 tbsps butter (melted)

Directions
  • Step #1 Preheat oven to 350 degrees.
  • Step #2 Drain the pineapple, reserving 3 tbsp of juice.
  • Step #3 Arrange the pineapple on the bottom of a greased 1 1/2 quart casserole.
  • Step #4 Combine the flour & sugar; sprinkle it over the pineapple.
  • Step #5 Drizzle the reserved pineapple liquid over top.
  • Step #6 Sprinkle top with cheddar cheese.
  • Step #7 Combine the crackers & melted butter; sprinkle it over cheese.
  • Step #8 Bake, covered for 15 mins.
  • Step #9 Uncover & bake 10 mins longer.
